My Dearest North Carolina,
This menu is my love letter to you—an ode to your land, seasons, and the food that has nourished generations. As spring settles in, the air is crisp with the last whispers of night’s chill, and the fields awaken with tender greens, warm eggs, and the first flavors of the season. The slowly smoking spring ham recalls colder days, while green tomatoes and preserved heirlooms bridge past and present. A cool soup soothes under the rising sun, and the rivers, clear and rushing, brim with trout. In shaded hollows, the last ramps linger, artichokes stand tall, and onions wait between seasons. Each ingredient honors the land, traditions, and hands that have shaped this place. This is my tribute to you—where past and present dance in the golden light of spring, and every bite is a reminder of the beauty and responsibility of calling you home.
With all my heart,
Forage and Grace
